Opening weekend has arrived! We are so excited to sit back, relax, and enjoy A Christmas Carol Reimagined. Here’s a few sweet treats to enjoy for tonight’s screening. The first recipe below is shared by Steve Gagliastro (Ebenezer Scrooge)—he’s been bringing the delectable dish to cast parties since before we met. I’ve renamed it “Bah Humbug Toffee Bark” in honor of the show! And if you want to get a little saucy, check out the second recipe for a deliciously spiked Egg Nog. In pre-pandemic years, our production of ACC featured Christmas Present saying “Drink of this!” to Scrooge who’s response was “What is it, Egg Nog?” A Christmas Carol Reimagined does NOT feature Scrooge drinking Present’s “milk of human kindness”, but YOU can recreate that moment from the comfort of your kitchen.
Bah Humbug Toffee Bark (aka Uncle Tak’s Cracker Candy)
Ingredients:
- 1 sleeve of saltine crackers (about 35 crackers) *Matzos can be substituted
- 1 (16 oz) package of chocolate chips (semi-sweet, milk chocolate, or white chocolate)
- 1 cup butter (or margarine)
- 1 cup brown sugar
- 1 cup of chopped walnuts, cashews, or your favorite nut (optional)
Directions:
Preheat oven to 350 F. Line a 13 X 9″or 10 X 15” baking pan with foil and place crackers on foil, one layer thick only. Melt butter in saucepan. Add brown sugar and occasionally stir until sugar is melted, blended and bubbling (this should take at least 5 minutes). Pour over crackers (crackers may float). Place in oven for 10-12 minutes.
Remove from oven. Add chocolate chips evenly to top. Let sit for 5 minutes then spread chocolate with a spatula until melted evenly over crackers. Sprinkle with nuts, if desired. Bake again for about 5 minutes (make sure to remove before chocolate congeals to a “sandy texture”). Remove pan and chill in refrigerator until firm. Break into pieces. Store, covered in an airtight container in the refrigerator.
Egg Nog (an extra boozy spin on the “milk of human kindness”)
Ingredients:
- 1 quart of Egg Nog (found in the dairy section of the supermarket, or make it from scratch)
- 16oz of whole milk
- 8 oz blended whiskey (not expensive)
- 4 oz brandy (Christian Brother’s)
- 4 oz Bacardi Rum
NOTE-You need a container that can hold at least 2 liters of liquid
